Sweet and Sour Meatball Recipe

Do you ever have one of those days where you don’t feel like cooking but… you also don’t want to end up eating another box of kraft dinner? That was me a couple days ago. I was feeling lazy and didn’t want anything too hard or complicated but also wanted a filling and somewhat healthy dinner. I saw that I had a box of frozen turkey meatballs in the freezer. It gave me the idea to try and make my own version of those cocktail meatballs that I’ve had at dinner parties. This recipe was so simple and tastes great! It takes a little while to cook but the great thing is you just throw everything in a pot and then just let it simmer for an hour. I also decided to cook up some rice to have with them which I did while they were simmering in the sauce.

Recipe (serves 4)

1 box of turkey meatballs (I used PC brand)

(I used store-bought turkey meatballs but you could also use another form of meatballs, a veggie version or even tofu)

1 tbsp olive oil

1 small white onion

2/3 cup of ketchup

2 tbsp vinegar

¼ barbeque sauce

2 tbsp soy sauce

¼ cup brown sugar

½ lime (juiced)

1 can of diced pineapples (with juice)

salt and pepper to taste

1 cup basmati rice

2 cups water

1 tbsp butter

Dice your onion and add it the pot with 1 tbsp veg oil. Brown your onion and then add in ketchup, vinegar, soy sauce, bbq sauce, brown sugar, lime juice, salt, and pepper. Heat on medium until it’s all mixed together and bubbling. Add can of diced pineapples. Cook for 20 minutes. Add frozen meatballs and let simmer for 1-11/2 hours. If you want to make rice to go with them (like I did) then while the sauce and meatballs are simmering throw your rice, water and butter into a pot with the lid on and put it over medium heat. Once it begins to boil lower it to medium-low and leave to simmer for 10 mintes or until all the water is gone. Test meatball with a meat thermometer (if you have one) they should be at 76 c (169 f). If you don’t have a meat thermometer though that’s okay because the great thing with the turkey meatballs that I used was they were pre-cooked.

Once they’re done just serve them over rice and eat!
